Mangini has been making candy in Bosco Marengo, a town in Piedmont, since the years just after the Second World War, with the company taking its current form in 1981. It has stayed close to traditional Italian methods since then, favoring straightforward recipes over anything overly processed. Mangini added green apple to its sugar-free range specifically because the fruit's natural tartness holds up well without added sugar. Mangini has applied the same old fashioned shell technique across its whole sugar-free line rather than developing a separate process for it.
