The company behind Galatine, Sperlari, has been making sweets in Cremona since 1836. Galatine itself came later, developed as a milk tablet meant to be easier on the palate than an ordinary candy, and it has been a familiar name in Italy for more than sixty years. The chocolate version came later than the original Galatine, but it uses the same base recipe and the same tablet format.
